What are the decent websites to learn about drones? Just been playing with a cheapie $28 amazon metakoo loads of fun. Was thinking I could likely assemble one for a lot cheaper since I can print my own frame/pieces with my FDM printer. What are the decent cost for performance brands to look for?

Lots of facebook groups - That's where I'm most active now. Search for something relevant (like FPV drones or Racing drones)
Start with the "Tiny Whoop" frame, which you can find on thingiverse. You should be able to get all of the parts from readymaderc.com or hobbyking.com

I feel like I'm working backwards because most of the engineers are loving the "simple" stuff, which is normally just aerial pictures and video. The harder stuff, like orthos and surfaces, are only used by about 30% of the company. Still more than enough requests to keep me busy as fuck (and I'm still only working with 4 of the offices), but it looks like everything for the engineers is super easy.
This was about 5 minutes worth of flying and 10 minutes on the computer and they're loving it.
I feel like I'm getting a new piece of software every week.
