Do you count them every time you subtract? Or have you memorized the fact that every time you eat 4 apples out of 7 you have 3 remaining.
You are talking about 2 different things. Understanding what subtraction entails is not the same as the memorizations we've all done for simple mathematics.

The only memorization I remember was the multiplication tables. Its been a while but I don't recall learning "7-4=3" as rote. Asking to take away apples or whatever is conceptual, it gets you counting on fingers, not searching your brain for the answer you memorized.
