"coloured person" was completely acceptable as recently as the 1990s though... at least where I'm from, but maybe we're racist as shit (not really). It was a completely politically correct term. The grammatical switch to "people of colour" as being the nouveau acceptable term, while the other is now offensive is completely retarded, as you literally aren't saying anything different, just switching the wording around. "We aren't coloured, we're of colour". It's silly. And even if it technically began in the 1960's, it's only really caught on recently. The 1960s way felt more like an attempt at stilted, fancy-pants phrasing than a genuine reaction to "coloured people"... Anywho...Colored has been considered an offensive term for a long time because of it's prominent usage in the days of segregation.
People or person of color was a term that was coined within the civil rights movement itself back in the 60's.

The black woman from the 60's insists on the term "negro" and that "black" is derogatory. The white guy from the 80's tells her that where he comes from, calling a black person a negro is a sure way to get your ass kicked.
