Pretty long cook. It was a thick slab but took 8 hours at 225F. Most people say 3-5h for baby back, but I don’t crutch. I actually have a chart i made myself over the years and can usually predict cook time based on precook weight. I use a thermometer to monitor too even though they can be iffy in ribs and usually do a bend test when it reads 190F. The stall was kinda long on these and bad since I don’t crutch. I used Sweet Baby Rays sauce. It’s as good as any sauce I’ve made myself, and I finish with a high heat 3 minute sizzle on each side. Pulled off clean without falling off. People that do the 3-2-1 method are just fucking their ribs up. Change my mind.
After eating the whole rack I fucked my wife on the kitchen table after making her suck the bbq sauce off my fingers. Just kidding. We will hibernate and barely eat the next few days. These were amazing.
