Did you cook a pizza in a cast iron pan? How did that not burn the crust before the cheese browned?

Wish I could go back in time and kill whoever invented Monterey Jack cheese. Bland, waste of space cheese.

It wasn't a little dry? Didn't see any sauce. Even white pizzas have some oil between the cheese and dough.
Yes I cooked it in the cast iron pan there. The bottom of the crust was a nice golden brown all the way across, similar to how it is in the top-right of the picture. I only cooked it in there because I had nothing else to put it on but it turned out great.

I used Pepper Jack cheese, which was an amazing complement to everything else on the pizza. The cream cheese was spread across the dough before anything else and it made everything gooey and delicious. The pizza was definitely not dry, it was a wonderful jalapeno popper experience on every slice. Can't wait to come home from the bar tonight and finish the rest off!

I've been watching a lot of ancient Julia Child cooking videos on youtube lately. It's really nice to see the french techniques that she points out during her show Little stuff that we overlook. Plus she's kinda crazy.

This is probably the best thread ever on RR, for whatever thats worth.

But you Brussels sprout lovers are as bad as in-the-shell sunflower seed eaters and for exactly the same reason. Both of these foods, if eaten your eyes open, have little bugs and worms inside them anywhere from 10-33% of the time. Its not hard to test. Buy Brussels sprout 3 times, either from different markers or far enough arpart in time to be reasonably confident theyre different batches. As youre eating the little bug factories, peel off the leaves one by one. Youre not going to find the occasional insect. Youre going to find a metric fuckton of them all at once. That nutty caramelized flavor you were enjoying? Yeah.

You'll either thank me or hate me but if you havent been peeling apart your sprouts and looking at whats inside those little fuckers you have been living a lie.
People say the same shit about broccoli and I've yet to see it once they are properly washed.

I don't know how you'd get more specific. Using good quality olive oil and a nice cheese will definitely enhance it. It's pretty easy to adjust ratios on the fly with pesto.

I like pistachios, as well. Lends a very green color. You don't really need to use basil, either, you can use mixtures of different greens. Pesto is incredibly flexible. You need a hard cheese, an oil, greens, some nuts, and salt. Fill in with what you like. You can make some pretty interesting flavors. Roasted red bell peppers in place of greens is also delicious.

Truth. Its like wings with ranch -- you may like them but theyre not buffalo wings unless they have bleu cheese. Or that round lasagna dish they serve in chicago -- might tasty, but its not pizza. Red pepper "pesto" is tasty but needs a different name.
