They have this new Cantina-Style which are kind of thinner and more cripsy, maybe a courser ground on the corn. That shit + some chipotle salsa = fat chaos.

When I make my awesome guacamole, it has to have Tostitos scoops. I like the lime Tostitos, but just by themselves.

I think I'm going to give those carnitas a shot this weekend.

This is what I was trying to think of.

This is what my wife buys. It doesn't stand up well to think chunky salsa, but if your salsa is a bit more watery it's great.

Yeah I use the Herdez chipotle salsa, it is pretty thin. I never really liked the thick chunky stuff.

So what brands of tortilla chips do you folks consider best when making things like chilli con carne and such? And please don't say Doritos! :S
For tortilla chips hands down Juanita's are the best out there. Closest I can find to Mexican restaurant handmade quality.

I've fried a bunch of corn tortillas trying to make them 'like a restaurant' and have never had results that were close. I think the corn tortillas you buy in the store are thicker, and don't fry as well, but I have no way of knowing for sure.

I've toyed with making my own corn or corn/flour mix tortillas, but just haven't yet. Anyone try that with any success?

If you have more than one Mexican restaurant anywhere near you, odds are there is a tortilla plant somewhere nearby. Get them from the source and they'll make amazing chips.

Made strawberry shortckae last night. Came out just right

2 cp flour
4Tbs sugar
1Tbs baking powder
1tsp salt
Mix well

Use hands to mix in 6Tbs of chilled butter until mixture resembles course meal.

Fold in 1cup heavy cream with a spatula

Kneed/pat flat in floured surface
Cut or mold into buscuts

Brush on heavy cream and sprinkle with sugar

Bake at 400 for about 12 min
Enjoy with sugar steeped strawberries and homemade whip cream.

I had some whipping cream in my fridge for the past month or so, had been planning on making alfredo with it but never got around to it. Noticed it was about to expire, so decided to open it up and made some home-made icecream.

Just did equal parts heavy cream (1 cup container) and 2% milk. Added a little vanilla extract, about a teaspoon of salt, and then threw in sugar until it tasted good, something like 5 heaping tablespoons ish didn't really measure it, probably about half a cup if I had to guess.

Whisked it a bunch, then stuck it in the freezer, whisked it rapidly again every half hour or so until it was frozen after about 2 hours... was super easy and came out really good, lots of recipes online call for heating up the cream and whatnot, screw that... I used 1 dish, 1 whisk, 1 spoon and it came out great.

Maybe about 5 minutes of actual "work" to make an amazing desert.

So, I bought some baby bok choy the other day. Anyone use this stuff in a recipe they like?
