First time looking in this thread and saw a tortilla chip discussion a couple of pages back. I picked up a kind of tortilla chip from the store the other month that I hadn't seen before called Xochitl (pronounced so-cheel) and holy fuck they are the most amazing tortilla chips I've ever had. They are a restaurant style tortilla chip in that they are thin and crispy. They are kind of similar to chili's, but if you've had chili's chips and salsa enough you know sometimes the chips are really good, but most of the time they are crap, well xochitl's are always good. Also, with those types of tortilla chips you know how occasionally you'll have some that overlap and stick together and they come out like crap, not xochitl's, every one of the chips is cooked to golden deliciousness.

Anyone have some suggestions for recipes that generate awesome leftovers? The cafeteria at work has gone downhill, and I'd much rather make a large batch of something and bring it to work and reheat it/eat it cold than fund the ecoterrorism they call their food.

Something like pulled pork or green chile is good because you can have it over rice, in tortillas, as a sandwich, straight from a bowl, etc. You can also cook a big ass ham or pot roast and that can make various leftovers.

I used to do basic pulled pork in the crock pot on a Sunday and that would be lunch for the rest of the week. Are you thinking something along those lines or something that offers a little more variety?

Was there a green chile recipe I missed? But yeah that's exactly the idea.

Nope that's exactly it. Gonna do that (and the carnitas everyone posted about earlier). I've done chicken a few times (and an italian version of pulled pork too). Just looking for something a bit different.

I'd recommend the slow cooker chicken and a large batch of rice and repurpose those ingredients each day into burrito bowls and stir fry.

Make a nice corned beef on Sunday to have for Sunday dinner, and slice that bad boy for sandwiches for the rest of the week.

Make a huge pot of your favourite soup, have yummy bread with it every day.

Find a woman to make you a damned sammich when you need one.

All three are good options.

(Oh shut up. You know I'm kidding.)

You better be planning on making Reuben sandwiches at some point with all that corned beef.

The Reuben is maybe the finest sandwich on Earth...I think I'd take it even over a Philly Cheesesteak

Joebro, if you ever get to St. Louis, let me know. There is an old Jewish deli here that the corned beef is like meat butter. Incredible ruebens.

I actually go down to St Louis fairly often(every other year or so), my moms family is all from there, ton of relatives in St Louis. What's the name of the place, I'll look it up for the next time I go. I'm always down for a great Reuben.
