Feeding 50 for lunch tomorrow. I'll have three sauces (Marinara, Alfredo, and Bolognese), and three pastas (linguini, penne, and rotini). Also, garlic bread, and a leafy salad. Lemon bars and Texas sheet cakes for dessert. Simple, but good and filling.

Dang, that's a lot of sauce I've got - three pots full! The house smells delicious.

Just yankin' ya anyway, I'm sure his recipes are fine, but as you might of guessed, I'm not a fan. And I'm glad your inner monologue doesn't lisp.
My only real experience with him was some show where he didn't want American kids to be fat. Why you gotta' hate on the dude?

Wassa Texas sheet cake?
I make something like this:

It's quite tasty, and stupid easy to make a lot of at once. It's great for gatherings, and there are lots of ways to vary it. I, for example, add quite a lot of orange zest to the frosting, and cook it longer so the orange bits are good and soft, and the flavour has had a chance to work its way in. I do like orange and chocolate together.

I hate Sauerkraut, and I hate mustard, but God do I love Sauerkraut and German sausage and mustard.

Gonna have to throw in a slow cooker of that this week!
I hate sauerkraut myself as well - but damned if I don't love cooking keilbasa in it though and the flavor it imparts.

Cool. It seems it's just in a 10x15 sheet pan, instead of a 9x13 cake pan. And I bet the orange with the frosting is delicious!



And Soy, it's hard to explain, but it's basically his face and mannerisms. There used to be a british website that just hammered on him relentlessly, but I can't find it anymore to point you to some funnies. I am disappoint. He's probably a very nice fellow, just not on my TV.

Other 'celebrity' chefs to hate: Ina Garten, Paula "Where's that little American Inventor boy with my mint julep?" Deen, Sandra Lee (wtf chef?), etc.

Yup. A high-edged sheet pan is what you need. It bakes nice and evenly, even in my crap oven.
Incidentally, I learned this weekend that cookie sheets with a high edge are called jelly roll pans. No idea how I missed that.

Made some wicked Salisbury steak tonight. Basically like a meatloaf recipe with saut?ed onions, garlic, seasonings of all kinds, fresh parsley, eggs, breadcrumbs, 1/3 ea of beef pork and turkey, maybe a bit more beef. Fried up the patties, put them in the oven and topped them off with some beef, onion and mushroom gravy. Let that shit bake for 45min... served with mashed potatoes and some broccoli and cauliflower. Finally something that everyone scarfed down, even my "vegetarian" kid which does not like vegetables. WTF?

I think I'm going to grill up some skirt steak and make sandwiches this Saturday. Has anyone ever grilled them directly on the coals like this Alton Brown recipe? Seems odd, but I think I'd like to try it that way. Not sure if I'll use the same marinade though.

Wondra flour + fish skin = crispy, non-stick goodness. Eric Ripert / Le Bernardin does it and this simple addition is pretty game changing for me. Works great for scallops too

Le Bernardins Crispy-Skinned Fish
For all meats, especially fish and chicken, make sure there is no moisture on the meat when placing it in a pan. There's also no replacement for a proper fish spatula. Ripert is BAR NONE the best cook when it comes to fish. He single-handedly brought papillote back into the limelight. And he's one hell of a nice guy.

And shame on Thomas Keller and Per Se. Da'fuck you not have hand-washing stations in your prep kitchen? Back to your regularly scheduled recipes.

Tonight I enjoyed a nice rib-eye cooked on the cast iron, with buttered garlic mushroom buttons. The wife had frozen breaded shrimp. I love Lent.

I get to eat steak on Ash Wednesday, and the wife gets, well.. fish. And every Friday til Easter, I'll be enjoying filets, rib-eyes, etc. I like meat.

And thankfully, according to my religion, the Feast of Meat coincides with Lent.

Continuing on with the Feast of Meat, and since it's a beautiful evening, I'm gonna grill some burgers and have some in-laws over. I scratch made potato salad, baked beans, and bread pudding with lemon sauce.
