I've been 'wanting' to do this for some time, but I'm lazy. Do you use gritty corn meal, or corn meal that has a finer grind?

You need corn flour(masa harina), not corn meal. The flour is much finer.

Need to figure out what I am doing wrong and I think the two cutting boards is a good way to fix the problem. All of our tortillas are too small and too thick for my liking.

I would do the cutting board then take a rolling pin to them after til you get it just right.
