This thread has died, did I kill it?

I'm making cod loins tonight. I didn't even know cod had loins, but I guess chickens don't have fingers, either.

I'm planning on just baking them with a buttered crumb on top with panko. I'd like to herb it, too, but not overpower the fish. Any fish tips? Side dish suggestions? Sauces/etc?

I like fish as plain as possible usually, so I'm not down with any of those sauces.

When I eat fish, I tend to be on the lighter side, so I throw in some asparagus, or some other veggie, and maybe some red potatoes. Pretty simple!

I cook a lot more fish in the summer months, when I can do it slowly, over indirect heat on the grill. I tend to spice an marinate it well, and not worry about sauces. I also prefer to serve it with rice or orzo. Add some sugar snap peas, and some fresh fruit on the side, and I've got a chubby.

That's no shit. It was ok, and it was very meaty, but slightly over-done. It didn't look done, but it was over. I'm obviously not a very good fish cooker.

But the rest was really good, made some dirty brown rice with onions and teeny tiny bit of garlic/ginger puree, and buttered carrots as suggested.

For a first time try, I'd give it a B/B+.

I want to make something special for my girls because my wife is going to be out of town, I am thinking of doing a bacon wrapped meatloaf. My wife doesn't like meatloaf because she is crazy so I think I will do that and some string beans or something, and some chocolate cupcakes with peanut butter icing. Shit promises to be amazing.

I think it's the word "meatloaf" that scares many.

I made a meatloaf once where I mixed up a regular meatloaf recipe, then rolled it out flat on a sheet of plastic. Then I added a layer of prosciutto, a layer of thin sliced mozzarella, and spread duxelle over it, rolled it jelly roll style, and wrapped it in puff pastry. It was fucking awesome. I need to do that again.

Kind of, yeah. That was sort of my original idea, but then the prosciutto and mozzarella got added in.
