Check this recipe - I think I originally got it from Gordon Ramsay, but no idea any more. It is everyone in the house approved - 6 year old, teenagers, old lady.

preheat oven to 400, grease baking sheet with olive oil (generous)
Cut potatoes into smallish cubed - size up to you. I used around 10 medium sized potatoes
boil said cubed potatoes until they pierce easily with a fork.
Drain in a colander, sprinkle with Turmeric (I used about four teaspoons), red pepper flakes (I did three healthy pinches), and plenty of salt and pepper, and toss. splash with olive oil, toss again.
leave the potatoes in the colander to steam for about 5 minutes
Once the potatoes are in the colander and spiced, put olive oil covered baking sheet in oven.
After 5 or so minutes, put the potatoes on the preheated baking sheet and spread out evenly.
Cook until your desired level of crispiness. I cooked mine about 15 minutes, turning at about 10 minutes.

Eat that up.

Stupid simple, but a really unique flavour that didn't require anything on it. Served it with a shredded cabbage/carrot/apple salad and pear slices and goat cheese on the side. yum.

ive been buying unsold easter lamb legs from my local market basket for the past 2 weeks. A nice home recipe i've used:

1x 1/2 half lamb leg
1 tbsp rosemary
1 tbsp oregano
1 tbsp thyme
1/2 tbsp table salt

Preheat your oven to 450, adjust an oven rack to the middle and another beneath it. Sit the lamb leg out to get it to room temperature. Season it with the above mixture. Put a roasting pan, small to medium sized, on the bottom rack. Put the lamb leg on the middle rack.

Roast for 25 minutes at 450

Adjust temperature to 350

Roast for 50 minutes for medium rare

Chop red creamer potatoes and put them in the roasting pan after seasoning and oiling. They take about 30 minutes.

psuedo grill marks from the rack? I don't know really. I remember seeing another recipe that wanted me to cook something directly on the oven rack and there was no justification, I just did it.

Clean up is even more of a bitch. Fuck, I hate cleaning roasting pans. No matter how much soap and scrubbing I apply, there's bits of protein and a slightly greasy film leftover. Now I gotta scrub those giant oven racks?

I read an article once that gave a method for cleaning oven racks and stovetop racks or whatever those things are called. You need those giant oversized ziplock bags, but it was basically water + ammonia + whatever you want clean, seal it in the bag overnight, and all the shit stuck to it will have fallen off.

to be honest i just turn my oven to 550 and burn the shit out probably once a month if im doing a big cleaning.

Not some secret family recipe or anything, and could certainly make changes as you felt... but... I've made it twice, the first time being for a party of 20, and I didn't have a scrap of it left at the end.

You need those giant oversized ziplock bags, but it was basically water + ammonia + whatever you want clean, seal it in the bag overnight, and all the shit stuck to it will have fallen off.
I use camping coolers for some big things. Bleach+water and let it soak for a day.

There is a Chinese grocery store right by my work that sells all kinds of imported food and they have an entire isle dedicated to soy sauce. They take that shit serious.
