My foray into the exotic arts of meatloaf was largely a failure. The bacon didn't get crispy except on the very top so I had to broil the shit out of it, which made a mess. It tasted great, but it pretty much just tasted like meatballs. Which made me wish I had just made meatballs. Next weekend I'm doing braised short ribs or something I have more faith in being excellent.

Maybe try butane torching the cooked bacon to crisp it up next time. I do this sometimes for some of my other bacon wrapped things, like bacon wrapped asparagus etc.

Broiling to crisp risks overcooking the meat.

I've done a modified poutine filled meatloaf in the past, IMO, to make meatloaf something great it needs varying textures in the center of it. In my case it was gravy and potatoes.

Something like that yeah, typically sheperds pie has mashed potatoes, and that would be weird slop mixed with gravy. So I did rosemary roasted reds with a beef based gravy inside. (On the thicker side for consistency)

Think Molten Lava meat cake with chunks of potatoes inside.

Last week I was like, fuck it, I'm hungry, and I still have leftover stuff for pizza. So I made another. I really enjoyed the crust, and so today I was like, I really want to try challah. I've never had it before, but it always looks delicious. So today, this is what I did:

What do you use your challah for? Grilled PBJ and french toast are my favorite applications. But only once in a while. Challah bread is fucking calorie dense.

Bertucci's is an east coast pizza place. The Sporkie has ricotta, sweet italian sausage, I think mozzarella (that's what I used), and I also believe black olives (left those off).

The recipe for the challah ishere. I used the modification in the first comment (1 whole egg, 3 yolks, extra honey, halved everything else). Honestly, we've just been eating it as slices. It's fucking delicious. I'll probably do some french toast. Unfortunately, we've already eaten almost half of it in one day (just my wife and I).
