Ribeye steak - For reasons unknown it wasn't cooked consistently throughout. Some parts towards the middle were overdone for some reason whereas the outside was still medium rare. I have no idea what went wrong.
I know what went wrong.

Sous Vide.

If god meant for red meat to be cooked in luke-warm water, he would have given cows webbed feet

Cows live on land. Fire happens on land. Fire is for cows.

It's simple

I did the redneck sous vide in the cooler method once. I like it better the old fashioned way.

while alton brown steak is still tried and true, i can't cook tilapia/flounder as well on a pan, than if i did with sous vide.

i also don't like pork sous vide, just had korean bbq tonite, i think i'll try to come up with a good marinade for my own korean bbq, mostly it seems like chili paste.

Wait, do people here REALLY sous-vide? I thought it was kind of like a bunch of guys who will say something while there are women around, only to do a complete 180 when the women leave."Sous Vide you say? Why it's FANTASTIC...I'll never cook another ste...ok, she's gone now. FUCK. Who the fuck would ever cook a steak sous-vide? Good Lord, cooking a steak with hot water, that's ridiculous"

Except for Soygen, I can totally see Soygen doing this.
I've never sous vide'd(?) anything in my life, however I have a Anova Precision that is due to ship by the end of this month. I got it on their Kickstarter they did earlier in the year. Once I get that, I will sous vide everything, including Cap'n Crunch.

The cottage cheese is a crappy substitute for ricotta.

My wife's family makes a similar recipes (without the cottage cheese though) and it's good to mediocre most of the time.

As a WOP, I find the use of cottage cheese in place of ricotta to be absolutely atrocious.

I sous vide a meal once a week usually. Typically immediately after work on Wednesdays so I have a meal to eat when I get home from bowling.

I get a lot of free king salmon from my dad during the fall so that's usually what goes in.

I wondered the same thing--it tasted great out of the pan. The flavors did develop a bit more after being in the crock pot, it tasted more like a bacon cheeseburger afterwards.

I know you definitely want to serve it in a crock if you're going to have it out for any amount of time. When it cools, it becomes hard and undippable--but still delicious!

Everything gets cooked, put into a food processor, then into a jello mold resembling it's initial form. I like it.

Can you deconstruct by eating? The reconstructing would stink, though.

This is a once digested, deconstructed, reconstructed cheeseburger. Doesn't sound so good.

Just acid cook it to simulate the digestive process then deconstruct it and reconstruct it again.

Noob.
