Make it a few times for yourself before you make it for a group of people. It's bound to be ugly as hell and falling apart the first time or two that you try, no matter how many videos on Youtube that you watch. Takes a bit of practice.

Don't put too much vinegar in your rice. Might be a good idea to do it Nigiri style for your first go (to get the cuts right for rolls).

Focus on the rice. Make sure you cut the fish correctly. The bowl of water for lubricating your hands and the knife is really important, correctly made rice is very sticky. Everything except the fish can be prepped beforehand, so when the time comes it is cut fish and assemble. Keep the fish on ice or in the fridge if you are not immediately making a roll with it.

All the above is good advice, but it is useless unless you do one thing: Make your knife sharp a heck before you start, sharpen again halfway through. It's more likely to hold together if you slice it cleanly and well without any pressure.

Anyone have a borst recipe that you use? I've had it two ways, once like a chunky vegetable soup that was awesome, and second like a clear broth with gnocchi in it. That was awesome too, but it was in a Russian restaurant, and I thought it was strange. No idea what the little gnocchi's were made of, but it really was good.

Just do chirashi sushi if you're making it at home. It's literally a bowl of sushi rice with the fish on top.

Get a really good sear on the meat before you add the liquid. Always elevates the dish that extra bit.

Oh, and don't use crap beef.
