I'll occasionally fry up some potato chips and a mandolin makes it so much better.
Mandolins make everything better, right up until you have the raised grade set and you brush a thumb over it. Then you hate them. Early cooking mistakes 101 =/

Both! If you have a reasonably equipped mandolin, it can do both amazingly well. Your thumbs are still at danger, though, unless you use one of those guard deals. We didn't have them in my early days =/

I have a potato gun!

We eat a lot of potatoes, and they stay good a long time in the cold cellar.

Dude, if you are using yukon gold for your french fries, you are a stud. Russets are for amateurs. This is mostly because golds are fucking tiny and it takes forever to get a decent amount of them cut into the right size. Russets are normally long enough and er... well, long enough, for it to be easy mode. Gold's is like expert mode.

I use gold for ERRYTHANG

Except sometimes reds for a different (inferior) kind of mashed potatoes, or roasted potatoes. Other than that, gold

My food processor has a large enough feed tube that I can do chip sized potato pieces on the slicing round. If I had to do that on a mandolin, I don't think I'd ever make big batches of chips.
