Sometimes I like to do what I call "white trash dinner night". Every so often I just get a craving for something cheap, yet hearty. Stuff like tuna salad, Hamburger helper, etc.
Tonight I made a sloppy joe casserole and it was badass.
Basically make sloppy joes as you normally would (ground beef + chopped onions and red bell pepper all sauteed, drain grease, then add manwich sauce)
Then add a can of corn to the pan, and about 1/3 of a brick of cream cheese, and let all that simmer & the cheese melt to make it creamier.
Throw it all in a glass baking dish (8x12 or 9x13 or whatever), sprinkle with half a bag of shredded cheese(cheddar is good, so is colby jack blend)
Then line the top with frozen tater tots, and sprinkle the other half of the bag of cheddar cheese on top of that
Bake the whole thing for 25 minutes at 450
Basically comes out like an awesome, cheesy chili tater tots in casserole form that is easy to cut & serve.
