Food borne illness. 120 is not hot enough to kill bacteria so if you are letting them develop for a few hours you could potentially have a problem.

For most food borne illnesses we are worried about, 126F is where they stop reproducing so generally you want to go at least that high. For beef there is another reason to go a little higher, 131F that is the lowest temperature in which collagen denatures into gelatin.

Not strictly true, killing things is about time, temperature, and oxygen. The inside of meat simply doesn't have enough oxygen to support most pathogens, so the pre or post sear (depending on preference) will kill all the surface things that don't die @120, like listeria. The only reason 120 could be a problem is if you don't sear (for some bizarre reason). My concern would actually be that if you hold meat at 120 for long enough there are enzymes that will break down the meat that don't until degrade @123 or so. Holding the meat at 103 and then 120 for an hour each is a popular way of "wet-aging" meat via sous-vide.

I keep getting them as well, but when I look at the stuff available, I feel like it's easier and more cost-efficient to just get that shit at BJs/Costco.
