Yeah you can buy boneless, skinless thighs you derp. :p We make orange chicken using thighs in the crockpot and the chicken just disintegrates it's so tender.

I went and tried a new place recently and their chicken tasted the same way, it was a really weird texture.

I would have that problem when I'd buy big family packs or just cheap chicken in general. What's the point of eating it if it's like eating shoe leather? Rather spend a few extra bucks for quality.

I mostly just buy whole chicken, 90% i usually just beer can it, i don't even bother brinin the chicken no more. I do give it a bit more scorch after i take it out the oven w/ my butane burner, to make it look more "bar b que'e". Btw if anyone is doing this, be care on the butane part, cuz when do the skin like that, it contracts really fast and you might end up having it squirt juice, worse if it gets on you, thats near boiling chicken juice.

Made some marinated flank steak and onion and cubanelles in a red chile sauce last night. Came out pretty good. First time making a red chile sauce and I just kinda winged it, next time I'll try to refine it a bit more.

I got some dried chipotles and arbols, reconstituted them, sauteed some white onion with garlic, cumin, oregano, paprika in olive oil, threw everything in a blender with about 3/4 of the water I used to reconstitute the peppers along with some apple cider vinegar and brown sugar, blended it until smooth and silky. Oh, and of course some salt.

Make your salads but serve it in a pita pocket. Make a sandwhich out of it. Also don't forget vegatable soups. Can pack a ton of flavor and nutrients in a good vegatable soup with very little calories. As long as you don't go ape shit with oil.

The only advice i have is make sure those mushrooms have had as much liquid cooked away before you wrap it up. Otherwise you're in for a soggy welly.

You should try making an individual (single serving) wellington ^_^

Maybe just wrap the sides with the pastry/mushroom/prosciutto
