I succumbed to the dark side tonight...delicious but not super good for me: fried pork chops (I season then dredge in combo apf and panko), smashed potatoes (real butter and half and half white pepper, a bit of salt, parsley and garlic), milk gravy, green beans with bacon and onion, and home made apple sauce. I have eaten nothing but eggs, popcorn or salads the last couple of weeks. It was time for some comfort food.

I'm just going to do a basic sous vide fillet.

So many women I know regularly eat popcorn. Which is great for me, because making them gourmet popcorn (there are dozens of different varieties of the kernel that have different tastes) blows their mind and is somehow super impressive to them. Never met a guy who just... ate popcorn all the time.

This is true but I eat it for convenience most of the time. I am not terribly hungry usually (that is one of the things Mr. Grief has done to me) and it's fast in the air popper. Nutritionally, it is a bit carb high, but also has some great dietary fiber, decent fat profile, not so great but some protein (about 3g) plus iron, magnesium, B6 and potassium which are all very friendly to women - esp. the B6.



Today, I am heading to a local store to purchase as many pork butts as I can for G's memorial party. I am worried I won't have enough food so I will probably go way the hell overboard. The store (Schnuck's for those of you in Mo/Il) has them on sale for 99 cents a pound. They also have ham super cheap too so I will buy that as well.
I was going to have my b-i-l do the smoking, but my cousin and a good family friend built a GIANT smoker (it is a thing of beauty - will try and get pics) and are going to do the Q for me. I have already bought a couple of prime briskets (thank you Costco - fucking 3.19 a pound for beautiful meat) and most of the supplies. I changed the venue because I am to 200 people for certain. A good friend of ours is a member at a local gun/fishing club so it will be there; plenty of parking, a kitchen and decent bathrooms. G and I went to several parties there and he always liked it (the clubhouse was built in the 1800s and the property is beautiful).
I don't know why I am sharing all of this - but I am excited for the party G would have loved. I have so many people from out of state (KS, IN, IL, NM, CO, GA, MA) coming. I just want it to be a full on Life Fest!

btw I made these things for breakfast they ended up quite damn good. typical bacon egg muffin cup but still, they are goooood

1. Use a mason jar to cut out circles on bread (any type really, I use 100% whole wheat bread but whatever)
2. spread a little butter on top of each
3. put a little butter in each spot on a muffin pan
4. Put each piece of bread on bottom of spot on muffin pan
5. Put cooked, soft bacon around the edge of each spot of muffin pan, like the sides of a cupcake
6. shreadded cheddar or velveeta on top of bread iun muffin pan
7. a little bit of pork sausage on top of cheese (optional)
8. crack an egg on top of each one, make sure it doesnt overflow over the top of the bacon
9. sprinkle a little salt/spices on top
10. 400(f) for 12 minutes or so (depending ojn how you like the yolk)
11. After you take out pop the top of the egg with a fork (it will likely look a little bloated on top)

Serve!

So I'm experimenting for Easter dinner. I have a leg o lamb in the sous vide, and I'm going to torch sear the exterior just before dinner. I'll report back. I haven't cooked lamb all that much, all the recipes said 131 was the right temperature for medium rare. This is semi-boneless, about 8 pounds. To be served with sous vide/flash fried poatoes and steamed colourful carrots.

You know what? I just don't like lamb that much. Everyone raved about how good the lamb was, and it tasted exactly like every lamb I've ever had. I prefer red meat that isn't lamb. Apparently this was very good for lamb, though. It was very tender and the heat was just right. The gravy was good.

That salmon had a really good flavor but I fucked up and undercooked it while trying to not overcook it.

Have one more marinating for tomorrow.

Anyone have any ideas for raw coconut? Wife bought one and the flesh has a soft-ish but not mushy texture if that makes sense... It doesn't taste bad but the consistency is weird. Might just cut it into thin strips and roast it to give it some crunch and dry it out a bit but not sure what to do.
