I wish I had a gas stove. Definitely a 'must have' in my next house.

Back in 2012 when I was searching for what I knew would be my very long-term apartment (SF rent control absurdity), that was one of my primary requirements. I found this place that was amazing. Next door to the Fillmore in what has already become a rather upscale neighborhood. Had a balcony and was a sizable apartment for an extremely reasonable price (for SF). Electric range. I passed.

They wouldn't let you buy/use your own range? I would absolutely let my tenants use their own appliances if they had them.

Speaking of ranges, I've read that electric ranges are actually the best at high heat cooking outside of super high end commercial kitchen ranges where there is far more burner power than normal home use gas ranges. But gas is the superior oven heat.

I understand the opposite is true. Electric ovens are far more consistent in their temperatures, and gas stove tops, even the residential grade, far out perform electric in speed and efficiency. I don't know about high heat cooking, what do you mean by that exactly?

Nahh not enough BTU in generic home gas ranges. Electric is definitely better. Even better yet is the new induction electric but that needs special pans and pots. Gas is cheaper though and gas has more potential if you get some industrial range rather than the home type.

Okay, so the home gas range I have has one burner that's quite large for super fast heat. Boiling water? Takes no time. Today I am staying at a friends house. Made some boiled eggs. Was rustled by how long it took the water to boil. Their electric range is, without question, slower than my gas one.

And searing a steak? My gas stove gets a pan very hot very quickly.

I dunno, I just don't see the evidence of what you guys are talking about. If an electric is great for you, super! I'll never have anything but gas.

I've never read that and always found gas to be superior in every way. Cheaper, instant temp changes, the flame goes around the pot/pan heating faster. Downside: Slight chance to blow your house up.

I did watch a Youtube recently with an induction range. That shit is pretty cool, but I would have to buy all new pots/pans.

Okay so I remembered where I read it, it was Consumer Reports:

Gas Response time is particularly quick, especially when compared to a radiant smoothtop. When you turn the knob from high to medium on a gas cooktop, the pot and the food in it experience that change almost immediately. And with most gas burners you can strike a match to light them when your power is out. But you should know that gas burners tend to be slowest to bring water to a boil.

For cooktops, both electric and gas are capable of delivering decent performance. But you may find it easier to judge heat by the appearance of the gas flame, and when you turn the knob from high to medium on a gas model, the pot and the food in it experience that change in temperature almost immediately.

Electric elements tend to heat faster and maintain low heat better than gas burners. But burners need time to react, so pots and pans take longer to adjust to changes in temperature.

Induction cooktops use the same hookup as a regular electric model, but they use an electromagnetic field to directly heat pans, offering quick response and control. In our tests, induction tends to be the fastest to heat water and the best at maintaining a steady simmer. But you’ll need magnetic cookware for the induction elements to work.

ppl are probably still confusing electric w/ induction, this gets more confusing when ppl see a glass cooktop and assume it's inductino (it's most likely electric)

electric and gas is about the same, whereas you can upgrade to pro like ranges and get WAY hotter than electric, however induction will start off being as good as pro ranges.

I feel like electric ranges can either be simmer or hot as the sun. No in between. Plus you can't immediately change the temperature. Electric stays hot for so long.

That's only a concern on the surface (heheh) though, because you can very easily just take the pot/pan off the burner

This matches my experience. I went from a crappy electric range to a medium-cheap gas range and I feel like I could get my pans to searing temp and boil water considerably faster with the electric than I can now with the gas. My Mom has a better gas range and it has more powerful burners than mine but still not quite as fast as electric. I have heard people say that gas is better but I haven't experienced that. I insisted on a gas range last time I bought a stove but I can't honestly say that it was an upgrade from my old electric range. It's easier to clean but that's the main upside that I have found and the downside is less power it seems to me.

My brother has an induction range and it can get a heavy steel pan super hot very quickly, but on a thin pan it doesn't work nearly as well and of course you can't use aluminum on it at all. When I have seared steaks on his stove it made an incredible amount of smoke as well. I don't know if that's because of induction somehow, but it seemed different from any other stove I've used.

It's possible I've just got a powerful gas stove. On full blast the flames can envelop my pan around the sides. That level of heat is only useful for boiling.

You're touching on the main reason people perceive gas to be better. Because they can see it. It probably doesn't matter at all in the grand scheme of things, I just thought it was an interesting revelation.

Someone talked about gas being easier to clean, which is true if you have a coil top electric stove vs gas, however, if you have a glass top electric stove nothing is easier to clean than that.

I don't know man, I have had shit boil over on the glass cooktop and crust onto the glass. I need to get a soft scrapper (copper usually) and special cleaning shit for it, or just constantly reburn that food.

this is why ppl love glass induction vs glass electric. glass electric is just an electric burner coil under glass, you know you touch anywhere within 6inches of that coil, you in for some pain, induction only works on a metal pot, you can spill fucking honey on an induction cooktop while it's on and wipe it up clean. any other surface you get stonehenge.

Superbowl food anyone? I'm making wings for sure. I think I'm going to take a shot at falafel as well. Maybe homemade corn dogs too. If you've never breaded and fried your own corn dogs you don't know what a corn dog is.
