Yeah, when I say difficult that is really what I mean. It is an acquired skill, knowing when the dough is ready for which application. But once you leard it you're good.

Phoenix, I bought an OXO scale for like 14 bucks I think about 4 years ago. Nice digital scale, converts between metric and lolamerica, removable tray for easy cleaning. Almost everything I have gotten from OXO works really well.

Anyway, I've had a probe thermometer for about 5 years now, and it's very handy. Personally, I don't think it's something you need to overspend to get a decent one. Mine was a gift, but I think it was probably around $40. You can get tricked out versions as nice as you are willing to pay.

You don't have to spend a lot on probe thermometers, but you do on instant read ones if you want them to actually work. I always think about getting one of those thermapens but have yet to pull the trigger on it.

With regard to the non-instant variety, I have owned several but I have yet to find one I like as well as thePolder Digital In-Oven Thermometer/Timer, Graphite : Amazon.com : Kitchen Dining.

At $22, you should really have a couple of these. I prefer having two thermometers to a dual probe version personally.

A good chili recipe would be nice. All the ones you see on the internet, have ingredients that I've never heard of before. I like spicy, but it has to go nicely with the taste of the chili to begin with.

I actually just put a pot on myself. It's not really a recipe, just brown meat, add onion, add crushed tomatoes and beans, add a ton of chili powder and a bit more cumin on top of that. That's probably about as simple as it gets for me. But I'm not really a chili purist though, and there is seriously about 5000 different ways to make chili.

Yeah everyone has their own chili. I use pork and beef, crushed tomatoes, chipotles, chili powder, cumin, coriander, salt, pepper, all of the garlic, some tomato paste, kidney beans, and.... I think that's it. Cinnamon sometimes too, but only a little.

Cincy chili is a taste sensation. I'm not sure if I'd want a steady diet of it, but still damn good in it's context... on hot dogs, on spaghetti, etc. with onions.

Edit: And a shitload of cheese.

Going to try the bread recipe I had 1 last time today, and this time I'm splitting the recipe into two halves and weighing the flour. I measured 3 1/4 cups of flour out twice and weighed it on a digital scale - one was only 1/4 ounce over 16oz, but the second bowl weighed in at almost 18oz.

Looking at"Bread Troubleshooting"it seems to indicate an issue with too much flour as opposed to not enough. My first instinctive response would be to add more flour for some reason.

There's two things people refer to as chili. There's the slow cooked chuck or round with no beans or the ground beef and beans version.

The basic ingredients that I use are:

Garlic
Onions
Salt
Black Pepper
Chili Powder
Cumin
Paprika
Cayenne

I just saute the onions and garlic, add a pound of ground beef and let that all cook. Then dump in a can of tomato sauce and a can of tomatoes (I usually use whole ones and then smash the shit out of them with a wooden spoon but you could also used diced ones). Then shake a bunch of the spices in until it hits the color/flavor/hotness that you're looking for. Be careful with the cayenne.

Turn it down to a simmer and let it cook while you make your cornbread and then put the beans in, bring it back to a simmer and eat.

I find I always like chili better if, rather than ground meat, I use a roast or something cut into cubes. I recently made some chili with some freshly caught venison cubed and cooked.
