Ones I recommend:

GANTZ - hardcore like Berserk and Titan
Steins;Gate - slow to start, but then gets really awesome
Black Lagoon - addictive and full of great characters
Mushi-shi - Its pretty low key but good
Darker Than Black - only watch the 1st season and OVAs, completely ignore season 2
Full Metal Alchemist: Brotherhood - like 52 episodes, but good stuff
Hellsing Ultimate - the full unfiltered awesomeness
Bokurano - has some interesting plot twists

You mention Ghost in the Shell, but is that just the movie or the series? There's a TV series called "Ghost in the Shell: Stand Alone Complex", its good.

Claymore is great until they decide to finish the anime before the manga finishes. Totally rapes the story.

There's also Lelouch of the Rebellion.

Fair warning if you want to watch Knights of Sidonia or Parasyte neither show is done yet. Sidonia season 2 airs in spring, and Parasyte is currently airing (episode 15 of 24).

Slightly un-related but could you guys recommend some shows to watch. I'm a huge fan of Akira, Ghost in the Shell, Cowboy Bebop, Trigun, Attack on Titan, Legend of the Overfiend. Hmmm I think i may have just listed all the anime i've seen. I am currently watching the Berserk movies.
Since the others covered the action stuff you seem to like, here are some options if you want to check out other genres.

Your lie in April - coming of age, romance, music
Another - horror, mystery
No game no life - comedy, fantasy
Bakemonogatari - romance, supernatural, quirky
Devil is a part timer - comedy, slice of life, action
Higurashi series - horror, drama
Elfin lied - action, horror
Spice and wolf - just watch it, kind of hard to categorize.

Psst, Samurai Champloo was awesome also. I loved the animation as well as the style of the series overall.

I think they missed a golden opportunity in this week's Maria, they should have made Ezekiel a trap. Could have played that for a few episodes at the minimum.

edit: Did I watch the wrong series? WTF is up with this Ange episode.. okay bikini Twister, now it's an Ange episode

*sigh I have given out too much Rep...

Seriously though thanks for all the recommendations. I am about to finish the third Beserk movie and my mind is fairly blown by that. I figured next up would be Sword Art Online or Full Metal Alchemist however I have already started to "source" as many of the recommendations as possible. I have far too much time on my hands ATM.

Thanks.

I definitely recommend SAO. I loved Full Metal Alchemist, but, SAO (the first season) was just...amazeballs.

Watch vanilla full metal alchemists up to episode 21 or so, then start watching full metal alchemist brotherhood to finish the show out. Pretty much the same animation, and the same voice actors so it won't be jarring. Vanilla does a better job with the first couple of arcs but diverges wildly from the manga because they out produced the writers and had to make it up themselves. Brotherhood stays faithful to the manga which is a much better story.

SAO is good but takes a huge dive in quality after the first season.

You also can't go wrong with the old school classics, Cowboy Bebop & Trigun. They ruled.
VASH THE STAMPEDE!

Rurouni Kenshin was a fun anime as well, but it went on entirely too long. Like 150 episodes or something.
I was also a big fan of Death Note, when that first came out. Lots of drama in the first half, then gets a little silly when they introduce like 20 new characters.

Full Metal Panic had a few series, and they were all good. The one was more childish than the others, but still entertaining none the less.

I'm completely hooked on the current awesomeness that is Shigatsu wa Kimi no Uso (You Lie in April). It's a drama, no action at all. About playing a piano or violin.

Haikyuu was another good one, all about a High School volleyball team. The first season was great, and they just announced a 2nd season.

I think we need to start a you lie in April fan club xarpolos.

There is no more death note after the first season in my opinion. Totally epic story with great characters. Then they tried to tell the same story again with two weak substitutes for the first seasons Antagonist(maybe protagonist), and it really left a sour taste in my mouth.

First season was ok, second season was all comedy, and third season was dark as fuck. Combined though it made a pretty good show. Could skip the second season entirely though if you don't like filler comedy.
