I've got 1 machine atm, still trying to farm some more keys. Never done organ runs but I'm down for trying. Can do mp5 solo key farm pretty solidly, and am a Monk, so hopefully I can be useful
Is it worth even trying for the machine stuff at MP3-ish? Or is it just better to stock up keys and wait till you can do higher difficulties?
Only a 10% difference per level. So you're only losing out on 20% chance as opposed to doing it on MP5 which is probably the most popular MP for soloing keys.

If your ONLY purpose is key farming, I would say wait until you can do it on MP5.
If you are asking if it is worth it to go ahead and pop the keymaster while doing general loot/xp runs on MP3, the answer is yes. Even if your key drop chances are lower, the chance is still decent and they are kind of loot pinadas. They will often drop legos or a bunch of rares.
Are you asking if you should be killing ubers to get organs at MP3? If so, I would say no, keys are too valuable to waste for a low attempt. I would either group up and do it at a higher MP level (people ask in trade chat all the time for groups, try and get in one of those), or sometimes you can get carried at MP10 by others as long as you supply all 3 keys (some will do it for free, some charge a few million). I personally would only do organ runs at MP7 or higher.
I think I got a pretty decent deal on this SOJ but I admit I'm not the baron of prices on these:

I picked it up for 20M. Pretty much all other barb+cold were well above it and those were with junk like bash. I really wanted a HOTA one but they were so few and far between. This one came up as a 1d12h and I just scooped it immediately. Figure it was worth at least 50M-100M.

I was also fully expecting cold soj for WW builds to be overrated but I'm wrong. The +% to elite is amazing for quickly getting past those guys (which was the #1 time waster) and the cold makes whites stay in my sprint puddles longer. It deserves the hype.

I run a 2H build so having high crit is relatively important since I have fewer ticks to get a crit than a DW so I felt it was pretty worth it. I also like having excess fury in case I get a dry spell on my fray procs. But it sounds like maybe the deal wasn't as hot as I thought it may have been.

Got the shoulders on my 2nd attempt. Tried gambling with vit shoulders, and it paid off! The hands after about 10. All an all some good upgrades!
I think making of +vitality gear is a better gamble if you're looking to equip more than 1 character. That way any other stat that you get is useful whereas if you craf int gear and get +dex then it's kind of useless.
That isn't true except for strength shoulders. In general most people would prefer +100 main stat instead of +100 vit. Crafting the main stat specific patterns means they can roll significantly higher main stat than if you were crafting off the vitality patterns; which would roll higher in vitality obv.

Alright, I'm up to 4 machines now and hopefully only a few runs from bumping that up to 7 (have 3 of the first two keys). Never done ubers so still looking for people to join for that. I'm farming keys on MP6 now and not dying too much so Ubers on MP8+ should totally be feasible I would imagine.
