I cooked chicken and sausage jambalaya for lunch for about 30 people. By "cook" I mean I bought all the stuff and watched. My brother in law cooked it, he's not a great cook but he kicks ass at this. His father won the big jambalaya festical cook off for years and years in a row that hundreds enter.

That's the best way to cook something. All I had to do was wash up the big pot we used and the rest went home with everyone else.

I went to Wolfgang Puck's "The Kitchen" for dinner in Grand Rapids today (Art Prize opened this weekend), and it was not impressive even a little bit. Even the decor was underwhelming.
Appetizer - overcooked stuffed mushrooms.
Entree - overcooked vegetables, under cooked potatoes, under seasoned grilled prime rib eye (which was cooked quite nicely, though).
Dessert - creme brulee that was overly eggy.

Relatively expensive, food not great at all, fantastic service. 3/10. Will never go there again.

Lol. 2 sisters I'm living with and wife are all gluten free. Went to a gluten free food convention today down in Portland. I agree that some of the breads are pretty damn good and eating gluten free isn't about always having gluten replacements every meal. Steak, potato, and a veggie is a gluten free meal.

Papa Murphys has the best gluten free pizza of any place out there. I'm not gluten free though. Get that fresh French bread from the store when it's still warm and taunt the rest of the family with it. Mmm

I went to Costco today and got a whole brisket. Fucker is huge. I'm almost afraid to cook it; I'm afraid of ruining $60 of meat.

How are you going to cook your brisket, man? I've been thinking of getting one for next weekend.
My grill will accommodate the whole brisket, but I don't trust it to hold steady temp for that long. It's 14 lbs, so I was thinking 6-8 hours. I think I'm going to oven cook it for 6 at 250, then put more rub on, and put some heavy smoke on it for a couple more hours. That's the current plan, but I've got nearly two weeks to think on it.

I was thinking I would sous vide it for about a million hours, then put it in my smoker heavy and wet for about 3 hours. I guess we'll see!
