Had a lady friend over last night and we made steak, broccoli and we picked up some smoked mozzarella pasta from Whole Foods. It was pretty fucking awesome.

I also grabbed some of the Tikka Masala sauce, I'm excited to try it this week.

Turkey is my least favourite bird to cook for holiday meals. Goose and Duck are both entirely superior meats. However, I gave in and am getting a regular turkey this year. I'm a try Alton Brown's thing, even if he's a weirdo.

Did a fried turkey a few weeks ago as a test run for Thanksgiving. So will be doing that. Nearly whole family is gluten free, so things like stuffing is out, but I'm thinking of trying to make that pioneer woman corn bread stuffing.

We buy the already cooked from somewhere, because we're lazy, but make all the sides. The wife's family is Korean + lived in Brazil for ~20 years so we generally do some sort of bbq as well.

You have a month until Christmas. Any idiot could learn to cook a turkey in that amount of time.
So my electric stove (that came with the house) is having issues. An error message came up on the clock "F1" which the internet says is a bad controller (interface that controls the oven. The range top works fine). So I have two options: replace the controller for a hundred or so bucks and hope that fixes it, or use this as an excuse to get a gas oven. I'd need to get the gas line run to the oven in this scenario.

I'm quite tempted to early christmas myself with a new gas oven

I hate turkey.

The wife said the sous vide turkey was amazing though so I am doing it again. She bought a 15 pound bird and I deboned it and got only 7 pounds out of it.

Here it is in its bath. We will do it for 5 hours tonight and then put it in the freezer after a quick cold bath and then broil it the day of after thawing it out overnight.

I worked for a turkey processing plant in college one summer. I can de-bone a turkey half drunk in no time at all.

I got all my stuff. Pretty basic stuff, turkey, mashed potatoes (which I make so good), stuffing, bread, green bean casserole, sweet potatoes, turkey. And some turkey. I really love turkey. Some kind of weird pavlov thing.

Making a pumpkin cheesecake for work right now. I really hate using the springform pan in the water bath, twice before I have had leaks. I really, really hope it doesn't leak, I have it wrapped in like 18 layers of alternating foil.

I've never understood the appeal of turkey, unless it's just a place to put stuffing. And I'm perfectly happy just skipping the turkey, cooking it as dressing in the oven by itself and cooking a ham instead.

Part of the sous vide appeal is the simplicity of it. This seems like a damn waste of time.

Yep, turkey is about the blandest meat you can possibly find. I wouldn't care for it at all if it wasn't necessary for the flavoring of the stuffing.
