Game day cooking:

2 large chicken breasts, cut into 'nugget' size
1 bottle Louisiana hot sauce (Frank's, Crystal, whatever you prefer)
Couple tablespoons of ranch

Marinate the cubes of chicken in hot sauce and ranch.

Dredge the marinated chicken in crushed Panko and flour. The ranch added to the hot sauce really helps the bread crumbs stick.
Add any extra seasoning you like to the flour mixture, I go plain with this.

Let them sit for a bit if you have time, to let everything adhere, then I usually recoat those that need it.

Fry until golden brown. Eat like a piggie.

Of course. And I only use spoon-fed, free range, organic chickens. Anything else is clearly inferior.

Took about 75 minutes from start to finish. My opinion on the technique:

Makes one juicy and perfect steak

Nice, and those potatoes look fantastic and I'm officially hungry. Just put a loaf of herbed beer bread in the oven.

And the 60 minutes in the sous vide gives you just enough time to prep and cook all your sides.

Getting your cooler ready is super easy too. The water in the bath was all just hot tapwater and it only dropped about a degree every 10-15 minutes.

No need, it will hold it's temp within a couple of degrees for an hour or two in a decent cooler which is more than enough to cook most things. Just need to make sure you preheat the cooler and account for the temp drop when you add the meat and/or whatever you are cooking.

Pretty much. I only lost about 5 or 6 degrees over the course of the cook.

By a look at your pictures:
Pan not hot enough, took way to long time in the pan to fry the steaks outsides. At least i assume you fried it before putting it in that imho big as fuck cooler machine.
