Is my mom a witch? Why do you all freeze it uncooked as soon as you get it home, only to thaw it and cook it on demand? Because the way I was taught to handle ground beef was to bring it home and immediately brown the whole fucking thing (probably in multiple batches, since 5 lbs or whatever is a lot of fucking beef to brown at once), and THEN portion it out and freeze it. That way you have a bunch of plastic baggies in the freezer just waiting to be defrosted in the microwave for a couple of minutes and then tossed into whatever you are cooking. I daresay there is no difference in taste doing it that way, and I'm not aware of it ever going bad either.
Is this rocket surgery witchcraft? Every single person I have ever spoken to about this subject seems amazed by this revelation.
If you do that then you can't form it into meat loaf, meatballs, or hamburgers though. Your way is fine if you're just using it as loose ground beef, but if you want to start shaping your meat, you've gotta do it raw.
