I need to replace some kitchen knives. Recommend a few options for cutting meat and fruits/vegetables.

I don't need the top of the line, just something that works well and will last.
I only use two - a standards kitchen knife from Buck and some antique cleaver I bought at an antique shop

lets be real, do you just use your knives when you just need to cut something? do you even put em in the dishwasher? do you know how to hone? are you sharpening your knives every month?

then get a knife block w/ a built in sharpening stone

i recommended something like this a few years ago to a friend and when i visited last thxgiving, i wasn't disgusted using the knives (note, when i come over for thxgiving, i cut the turkey, no one has a say and no one argues)

I'm not sure what else I'd use knives for other than cutting something. My knives don't go into the dishwasher and I do sharper them frequently, not monthly, but a few times a year at least.

My wife and I cook quite a bit, and we had a period about 8 years ago or so where we were really into finding that perfect kitchen knife. Henkles, Shun, Wustof etc. What we ended up using nine times out of ten was a $25 cheap ass Victorianox knife. Buy a knife with acceptable steel and spend the extra money on a good diamond stone to keep it sharp and forget about all the designer shit unless you just have to have a expensive brand name.

last time I carved a turkey I used a Ka-Bar BK-2
