The actual reason is because the fishing artifact is going to allow you to walk on water at a point, but I still find it to be an odd change that they're only usable in Pandaria / Draenor depending on which mount you have. It doesn't actually matter at all, but it's silly. Especially since it was really fucking hard (well, annoying) to get those mounts.

Except the content is terrible to go through without flying. When your playerbase has become accustomed to being able to fly for the past ~10 years that's part of your game. The only thing janky or "unimmersive" about flying is weirdos like you who somehow manufacture retarded scenarios in their minds for why it's cool if we suddenly can't do what we've been able to for 10 fucking years. It would be like Toyota suddenly removing blue tooth audio from their vehicles because... well there's no good reason. Period.
It's silly because the model of "level to cap, pay gold to get flying" worked just fine for past expansions. For some reason in WoD they were butthurt about people being able to fly over their content and dug their heels in saying no flying ever. Then there was massive backlash and they caved and said ok you can fly but you have to do all these achievements first! And here we are.

Striders were nerfed because people were using them to skip fights/gates/difficult terrain in Legion, given that there is a lot of water/rivers/coast.
This is also ridiculous and I really hope it doesn't end up applying to low level zones. Strider is best mount by far for alts. For Legion it seems like a limp dick nerf considering you can just make a bunch of water walking potions (or be a DK/Shaman) and do the same thing if you really want to.

What are the big money making professions these days? Back when I still played it was Alchemy for Darkmoon Trinkets/transmutes and jewelcrafting so I have like 8 Cata maxed alchemists for transmutes and such. That still a good money maker?
Enchanting, mostly for weapon enchants and tailoring bags, that's on my server at least. Everything else sucks, unless you are going to go balls deep into the Felblight farming and make ilvl 705 stuff. You can theoretically make an army of alts to craft the 630 stuff, especially weapons and get some coins there, it beast doing nothing, but it's also boring.

I'm definitely not one of the big fish in my server's market but I made good money doing the upgrade items of most professions.
The last profession I added was leatherworking and that alt has made over 100k in ~70 days just reposting the two "big" essences every 48 hours.
Sure it doesn't sound like much but it adds up between professions. I can't even say which one is best, though TSM tells me one of the blacksmithing essences gave the most revenue.

Fuck blizzard for nerfing the waterstriders my alts loved so dearly. Not cool.

I wouldn't have minded having no flying in the game, but they would have had to have done that right from the start. As has been said, removing flying now, after 10 years of having it, is shit. I'm all for having different ways to get flying, be it gold, quests or reputation, but the particular way they did it in WoD was fucking retarded. The Tanaan Jungle rep missions are just plain awful. They're boring and take far too long to do, and as a result, I still haven't gotten around to getting them done, and probably will not. I don't mind having to wait until 110, or even a major content patch for flying in Legion, but for the love of all that is holy, don't repeat WoD!!

They couldn't just toss it in without a new requirement to get people to sub one month so they slapped the jungle stuff onto it.

I just bought the rep tokens and had it quite quickly.

Actually, it's a very sound reasoning. You are not allowed to fly over it until you've done at least once all/almost all of the outdoor content there is.
The Tanaan Jungle rep missions are just plain awful.
That's basically the only problem with it, and I still don't understand why they used a rep grind as a metric of "having done Tanaan" instead of having a simple set of achievements: "Finish the following areas", "Beat those 3 sabermaw champions", "find 10+ treasures in Tanaan", "kill 5 of the following rare named". As it stands, I can have "finished Tanaan" without finding a treasure or killing a named (just getting chests around to grind my daily 10 apexis frags).

Thats the thing though, its not really about if you cleared Tanann, its more of a check if "you played at least X days".
They could've tied the achievement to clearing the main quests on each zone and added something similar for Tanaan, that would be enough to prove that you've experienced most of the world in at least one character without flying but that would be giving it away without any guarantees of time played and like a_skeleton_03 said they couldn't just let that happen.

That seems like a pointless reason to do it. Want to skip stuff bring a DK or shaman to water walk you or drink a potion to do it or a priest to levitate you. Pretty much because of the fishing artifact seems the only legit reason and even thats kinda silly.

Because it hamstrings their ability to design content with any sort of reasonable parameters. Guards shooting nets and flying patrols are just as dumb. The engine can't handle much more than that. They had to go in and spend months of engineering hours to hack it into the expansion that was purported to have been built without it at all. They've been pretty cavalier about killing features present in "old" expansions before- I don't think flying is a sacred cow anymore and its presence or lack of is less important as time goes on. There are other ways to solve the what it did in the past. It was really impressive and useful when TBC came out, because that landmass was jank as hell and the flightpaths were terrible. But now, ehh, it saves potentially a little travel time or a mob pack or 2 to face smash in the overworld? Yeah it's handy for alts and farming and what not, but really if the content is that terrible to go through without skipping most of it, flying isn't the answer.
It really only hamstrings their ability to design leveling content. Also, WoD proved flying is a sacred cow. Legion will have the same implementation of flying as WoD according to the devs. Make players stay on the ground their first time leveling and gearing up.

Also, keep in the mind the implementation in WoD was also done in a way to give players something to do. A lot of people would have never bothered with Tanaan, but flying forced them there. Whether that is good or not is certainly up for debate. It is frustrating for a new player since they have to do a lot of stuff that players that were around pre-Tanaan/flying already had completed.

Mounts should all operate the same. Water Strider was basically mandatory to have because it served a function other mounts did not.

Biggest problem I had with the no flying thing in WoD was spending several minutes running somewhere only to get there and realize the ledge you needed was the OTHER ledge that went off in the opposite direction you needed to go. Now you have to run back to where you started. Too many dead ends or "cant get there from here" situations.

I don't get peoples obsession with being stuck on the ground. I haven't ever seen another player and thought "damn, I'm so immersed right now, if I could fly this would be less immersive".

I didn't really mind not being able to fly from one building to another in my garrison. But I'm glad it's back.

There any addons that tell you what each stat does for your current character? Or a hotkey to display that info on items?

EDIT: Also, since you get put in CRZ zones is there any way to farm rares more effectively by "resetting" your CRZ (jumping to a different CRZ to look for the rare?)

Theres an addon called Cross Realm Assist that'll autojoin you to groups with that option on. Makes realm hopping really easy.
