You're misreading that. It's not saying carbs are bad. It's saying specific refined carbs are (white flour, sugar, white pasta, etc). As for blood sugar levels, I think I've mentioned this before, but I will admit I'm not fully educated dangers are moderate blood sugar spikes. MyFitnessPal recommends for me ~300g of carbs, 72g of fat, and 81g of protein. I always hit the protein, come close on carbs and fat. I've been going to the gym regularly and eating like this for quite a while and I haven't had any deleterious health effects. I'll fully admit that doesn't mean I won't later. But I'm of the opinion if I have to severely limit my carbs that much just to stave off the small chance of diabetes when I'm 50 or whatever...eh, just kill me now.
I honestly think this is going overboard and hyper focusing on any negative health effects carbs might have. Did you know that driving your car for 2 hours in gridlock will raise your chance of cancer because of all the carcinogens you're breathing in? The previous statement is ridiculous. But I FEEL(no scientific validation here) people are acting the same way to casual carb consumption.
I probably thought the same way back when I was a teenager and for some reason decided to make the switch. Now though, I think white bread is fucking terrible. In fact, I specifically look for whole grain hotdog and hamburger buns. Otherwise it just tastes bad to me. You realize just about every grocery store makes fresh bread daily right? Even the bread Wal-Mart makes is fucking delicious when they first make it. Frys, Safeway, Sprouts etc. all bake bread daily. Mostly what's in it. Real bread shouldn't have such a long shelf life. If your bread can last a month, its probably a good idea to check the ingredients to see what you're really eating.What's wrong with wonder bread? It makes the best PB+J
