Meet with the planner to appease the wife and help get your head in the right space, but don't sign up to have your investments managed. Do a little research and then go to Vanguard and do an 80/20 or 90/10 stock/bond split in the lowest-fee domestic/international funds you can buy.

In all seriousness tell her that you want to spend the money on that, that is a present to yourself and you deserve it. Its a one time thing and in no way a recurring monthly expense.
Regarding investing just max out your 401k every year in an index fund.

Yeah but he wants to get paid. Mathematically derived index funds don't care about being paid. Or rather, they do to fractions of a percent rather than 1%+ in fees on your returns.

I'm not an investment guru but seems like maxing 401K and opening an IRA if you still have extra income to save is a good way to go for retirement savings. If it's not, them I'll be broke when I retire. Hopefully the guitar collection will have greatly appreciated in value by then.

Well if you can't spend the money right now for the guitar, talk to her about how you're going to save the $800 for the guitar. Start a guitar fund. It's not unreasonable to treat yourself once in a while. Hell, make it a perpetual "treat yo self" fund.
