It's been a while and I have played a couple games of Dwarf Fort since then, but don't you need to have the jail all set up before it gives you the option to capture? Built a wall around my shithole base and a killbox. I tested it against bears and they got annihilated. I also built a huge pasture with dandelions. I have no idea what dandelions do.
I looked for a way to auto-hunt certain animals and I guess I need to download Steam Workshop::Colony Manager Colony Manager, which requires a fresh save, so I guess it's manual hunting for me.
I built a big ass wall around the top half of the map.
I have no idea what I'm going to do with the space. I can't think of more effective layouts besides "pile everything together lol".

I wish they had a better way of handling heat loss thru doors. Building airlocks always feels clunky. Give me a high level research that lets me build doors that don't lose heat when opened for a secCouple minor tips:
Doors are the main source of heat loss so you want to reduce the number of doors between areas you are trying to heat/cool. An airlock with two wooden doors separated by one space works great for walk-in freezers. Doubling up the walls helps too (I see you did that already)
Make the pasture much larger so the animals can live off naturally regrowing plants. If you have to manually plant things for them to eat, it will cost you far too much pawn work time. Place a pen marker and click on it, it will show you how many animals it can support. Animal population can spiral out of control in the amount of work needed so cull/sell regularly.
